But now there is the SoundMan-Server audio engine which a number of third party 
developers are creating front ends for and which will handle up to 1000 live 
inputs and outputs with inherently low latency (a matter of somewhat less than a 
millisecond) and is determined almost entirely on the soundcard/interface and 
driver - but these are improving considerably these days.

Yes, this is Windows software but you don't have to deal with it any more than 
you have to fiddle with the equipment in the rack and probably less since it 
just runs in the background on a PC that normally sits in the rack or near it so 
it is convenient to whatever audio equipment you want to connect directly to it, 
including the power amplifiers.  And all control of the software is done over 
the LAN so you can have any kind of controller or system talk to it, including 
QLab, touch screens, moving fader controllers, AMX, Crestron, linux or windoze 
software - all simultaneously....
