With Noah's continued and gracious help, we've narrowed in on the
culprit:
/Library/Audio/PlugIns/HAL/DVCPROHDAudio.plugin
This is an Apple plugin that is installed with Final Cut. When it is
installed, the freeze occurs. When it is removed, the freeze does
not occur.
When notified of this information, the Apple engineer helping me on
this issue replied:

So I will be filing a bug, BUT it would be helpful to know if anyone
can report if this freeze still occurs with a more recent version of
Final Cut. Noah was testing with 5.1. If you have the most recent
version of Final Cut let me know if you can create this freeze and I
will include that information in my bug report.
Thanks everyone for all your help and your patience as I tracked down
this issue!
Best,
Chris
